Ingredients (makes 10)
For the base:
155g Paleo Foods Co. Low Sugar Keto Granola
3 tbsp Coconut Oil
2 tbsp Almond Milk
For the filling:
150g Cashew Nuts (soaked for around 2 hours in water)
20g Vanilla Protein Powder
3 tbsp maple syrup (or for a Keto or low sugar version swap with a sweetener such as erythritol, chicory root fibre or stevia)
50ml Almond Milk
handful of Spinach
juice of 1 Lime
1 tsp Matcha Powder
Method
In a blender, blend the granola with melted coconut oil and almond milk until well combined and a crumb like texture.
Press this cheesecake base mixture into a square tin lined with greaseproof paper.
Blend all of the filling ingredients together and spread on top of the base.
Place in the fridge for a few hours to set, or in the freezer for 1 hour.
Remove from the tin, cut into squares and enjoy!
